AMS is a ready-to-use blend of inorganic acids which has the function of reducing alkalinity by adding chloride and sulphate ions in desired amount. Its use improves yield, fermentability, clarity and therefore has a positive effect on beer stability. Unlike phosphoric acid, it does not create insoluble complexes with calcium, and therefore does not decrease the concentrations of this indispensable ion.
