Microbial starter culture consisting of a Blend of 70% Lactobacillus plantarum and 30% Pediococcus Pentosaceus to be used in the production of sour beers, tuning specifically for this application.
Designed by the brewer Nicola Simon, it makes a pleasant combination endowing the finished beer with freshness and lactic aromas, characterised by peculiar sourness.
Proper use of the starter following the protocol "secure acidification" excludes the possibility that problems may occur.
