In the Highlands of Scotland, centuries ago, small breweries began producing rich, dark, hoppy ales know locally as “Heavy”. In addition “Light” beers were also brewed, known south of the border as Milds, but it was a pint of “Heavy” which typified the highlanders’ choice.
You can now recapture this distinctive rich bitter flavour, with its dark, malty brew, balanced by a generous helping of hops. To enjoy Highland Heavy Ale at its best it should be served at cellar temperature.

Brewing instructions
1. Stand cans in hot water for 5 minutes so that the extract becomes liquid.
2. Pour the content of the two cans into a clean and sterilized fermenter .
3. Boil along with 3.5 liters of water.
4. Stir and dissolve it thoroughly.
5. Add cold water as needed to reach 23 liters. Stir carefully, ensuring the contents are completely dissolved and let the content rest until temperature drops between 18° and 21°C.
6. Add the yeast uniformly and stir.
7. Cover the fermenter and leave it in place with a temperature between 18° and 21°C.
8. The fermentation will be complete when the foam stops forming (8-12 days). Alternatively the density should remain constant for at least 2 days below an SG density of 1014.
9. Bottle or keg.
10. Add about 5/6 g/L of sugar for each bottle (up to 3 g/L in kegs).
11. Cap the bottles tightly and place them for two days in a place where the temperature is between 18° and 21°C.
12. Let the bottles rest in a cooler place for at least 15 days or until the beer has become clear.
