Glucose syrup containing fructose and maltose.
It is a purified and concentrated aqueous solution of food saccharides characterized by a high fructose content. It is presented as a clear viscous liquid from colorless to slightly straw yellow with a strong sweet taste and a neutral odor. Thanks to the presence of a small percentage of complex sugars it crystallizes with difficulty and does not present conservation problems. Used in refermentation, it is metabolized by yeast very quickly and dissolves easily in beer.
Concentration of fermentable sugars (glucose, fructose and maltose) 61-62% by weight therefore 61-62 g fermentable sugars on 100 g syrup or even 100 g fermentable sugars on 161 g syrup.
Density about 1.39 g / ml therefore 0.86 g fermentable sugars in 1.0 ml syrup
